This week, I started taking a culinary class in Freshmen Seminar where we will be learning the basics of cooking, and how to make easy meals… We started off with making a crêpe.
You start by cracking and whisking eggs, add milk, and mix them together. While doing this, you melt butter in a separate pan. Once it is fully melted, slowly mix the butter into the mixture, adding some amounts of it periodically. Then add flour, and mix uniformly and the batter is ready. Once the batter is ready, heat a pan until it is very hot. Take a ladle and scoop the mixture to the top of it. Bringing the pan to the ladle, pour the mixture into the pan in a circular motion. You then move the pan in circles, slanting it downwards so that the mixture reaches all the ends of the pan. This makes the crêpe thin. Wait for a minute, or until the edges are brown, and flip it over. Wait another minute, and then transfer the crêpe into a separate plate.
It is a very simple recipe, and reminds me of how we make pancakes, just that crepes are much thinner. It also reminds me of a dish in India called dosa. It is very similar to the aforementioned, with the only difference being that dosa does not use eggs, and instead is a batter of rice and black grams. The best part was that we could make and eat as much as we wanted (as they had us make an enormous amount of batter). It was a great experience, and I look forward to whatever I get to make next.
